Serious Pie

Summer vacation is coming to an end and man oh man did it fly by. It's time again for papers, textbooks, exams, and stress. Only 1 more year and then I will officially (cross my fingers) have my Masters of Education in Autism & Early Childhood Education. I'm actually excited for it to be fall again but sad to see summer go.

On my last night of my summer trip, I headed to Tom Douglas's Serious Pie in downtown Seattle. My dad said that it is usually packed with a line of hungry diners waiting to get seats in the intimate restaurant. We were luckily seated right away.

{Side note: I don't understand why people put periods after titles}
{Sorry for the dark pictures, the lights were dimmed}

A majority of the space is occupied by communal tables that seem to make it ok to uncontrollably pine for your neighbor's food. From the tables, you can see right into the kitchen where they make the pizza dough and homemade ingredients.

We ordered the buffalo mozzarella, sweet fennel sausage, and eggplant pizzas. I practically savored each bite. The dough was crispy on the outside, yet airy, chewy and soft on the inside. I don't know how they make their dough but I would really like to know. All of the ingredients were full of flavor. Tom Douglas managed to make simple ingredients shine.

 {Daily Special: homemade bacon + eggplant + other good stuff that I forgot to write down}
 {Buffalo Mozzarella, Red Sauce, Fresh Basil}
 {Sweet Fennel Sausage, Roasted Peppers, Provolone}

Each of the pizzas are served on cutting boards while the drinks are poured in mason jars. And I loved it. It's the little things I guess.

What to order: everything. This is the best pizza I've ever had.

On that note, I am now starving looking at these photos again. I went to open the fridge and saw this.

I guess this is what happens when my boyfriend is home alone while I am gone for 2 weeks. Off to the grocery store!
